You can set the fonts, sizes, and colors for outline view and index card view, as well as image titles, through the Appearances tab in Preferences.

 

You can also change the body text and header styles for notes through the Inspector or the Format > Styles menu. But if you want to change, say, the summary and other fields in plot, character, and setting sheets displayed as text, no, I don't think that's possible (yet).
